The different courses have been carefully selected and put together.
Please note that per group there is a maximum of 2 combinations per course.
During the 3 hour informal cruise on the canals the following dishes can be served:
- Combination of Dutch shrimps and crayfish with a citrus-chive crème and granny Smith apple
- Tartar of wild salmon with capers, spring onion and smoked halibut
- Steak tartar of Scottish beef with garlic crouton, a green herbal dressing and poached egg
- Thin sliced oxtail confit with truffle mayonnaise and olive crouton
- Salad of artichoke, green asparagus, rocket salad, tomato, olives and basil oil
- Soup of potato, celeriac and truffle
- Monkfish and a terrine of potatoes and a mustard beurre blanc
- Saltimbocca à la Romana: veal wrapped with Parmaham and sage, served with Risotto, parmesan and gravy
- Marinated and braised duck with crispy chicory, a “croquette” of potato and truffle and sauce of poultry and laurel
- Crispy baked beef with tagliatelle with sauce-antiboisse and chinese cabbage
- Homemade Tiramisu
- Banana-chocolate crumble with Dutch cookies
- Fresh fruit with citrus mousse of youghurt, Dutch cookie and raspberry coulis
- Selection of cheeses
